Goru Chikkudukaya Kura / Cluster Beans Stir-Fry

Kothavarangai Masala. Kothavarangai Poriyal. Goru Chikkudu Kaya Vepudu.

Okay…this happens to be my favorite vegetable. No, its not the usual adage we bloggers learned to say over the years! Seriously, I mean….its my favorite:) Back home, when I was growing up, my mother used to make long face to prepare this vegetable…saying it would affect the heart or produces too much of bile…etc. I think, she is actually lazy, as this veggie demands too much of labor, removing strings and chopping! Oh, no, am positive…that would be the reason:) I know her:)

Well…I have the privilege of choosing and fixing my own dinner for some years, now (living far far away from my home). So, I can actually spoil my appetite with ice cream, chips; or I could go on crash diet and starve myself; or simply pick the most appealing produce n cook!! My mommy is not going to nag about the ‘side effects’ anymore nor my father is going to scold me for going hungry in the morning! Hmmm, that’s the freedom..I was craving all these years:) And, surprisingly, I am pretty good at taking care of myself. Yes, no one has to tell me what to eat, and what not to. So, here you go…what I decided to procure, cook and dine:)

Ingredients:

Cluster Beans 1 kilo
Garlic 8-10 peeled, crushed n chopped
Salt
Jaggery 1 spoon
Turmeric powder 1/4 spoon
Chili powder 1 spoon
Tamarind 1/4 spoon
Cumin seeds 1/2 spoon
Mustard 1/4 spoon
Curry leaves few
Oil few spoons.

Method:

Yeah, pretty much you would have guessed the recipe now with this set of ingredients, above!

In a wide wok, heat oil. Throw in spices and wait till it pops.

Add garlic, vegetables, and powdered spices, cover and cook.

If needed, add water for thorough cooking. Then, remove the lid and stir-fry over high until it is fried to perfection.

Serve to go with your chappathi or curd rice, this happens to be the best combo.

    Seriously…this is my least favorite vegetable Malar! ;) once in a blue moon, it’s available fresh in Indian stores. At that time I buy this after 1000 thoughts! LOL! :)

    We use to pressure cook this veggie, drain it and discard the water…my Mom says it has lot of gas so we follow this method. Your version is different..should try this once.

    Oh Mahi, yeah…everybody around me hates this veggie too. In one way, I get the Lion’s share, hehe:)

    Yes, my mother too follow the same instructions: pressure cook and discard the water, saying it produces bile or something and also she advices to add more cumin seeds powder to the preparation!

    But, am an unruly fellow…just do the way, it pleases me:)

    U won’t believe this is my fav too…i love this poriyal with more coconut or some cooked dal…like your Mom my Mom also used to say this veg will increase bile, this n that…
    Now i too have freedom n i could make any recipes of my choice :)

    Oh Sangeetha, thats nice u too like this veggie:) And am really surprised why all our Moms kept saying the same thing about this veggie and deliberately pressure cooked n threw the water out??? Maybe they should be right to some extend, I guess…
