Kadhamba Saadham / Spicy Vegetable Khichdi

Other Names: Mixed Vegetables and Lentils Rice. Spicy Vegetable Khichdi.

The weather down here at Mississippi is really really warm, at this time of the year! Every little prancing around the neighborhood, leaves me like a half-baked potato. If you drop an egg over the patio…it would be done thoroughly into an omlette within minutes!! So, I am restricting myself from all kinds of outdoor activities. I try to keep myself well-hydrated…and went on with this fruit fast for the past few days…hmmm, almost a week. With that incredible pain in the wrist’ it was only a good thing to do to myself. Am enjoying this no-cook recipes these days. Its kind of fun, you know…at least, I am not expected to cook anymore for dinner:) All I have to do is…grab a fruit and settle down in front of TV! Rarely, I did some juicing experiments…no fuzz, no mess and nothing to complain about:) Finally, after a week’s rest….got to fix this delicious meal…which was very rewarding. So, here you go…

Ingredients:

Raw rice 1 cup

Thuvar dal/lentils 1/2 cup

Mixed vegetables of your choice 2 cups

Salt

Turmeric 1/4 spoon

Chili powder 1 spoon

Coriander powder 1 spoon

Tamarind paste 1/2 spoon

Mustard seeds 1/4 spoon

Cumin seeds 1/4 spoon

Asafoetida 1/4 spoon

Curry leaves few

Oil few spoons.

Method:

Cook rice and lentils together with enough salt. And set aside.

In a wide wok, heat oil and add veggies, salt, and powdered spices to it…stir-fry briefly.

Further add tamarind past to it and 1/4 cup of water. Bring this to boil.

Now stir-in cooked rice and lentils to it. Mix well.

In a separate pan, heat oil and add the tempering spices, wait till they sizzle. Now run this seasoning over the rice prepared.

Serve warm with pappads and raitha on the side. Enjoy:)
