I love any vegetables, as long as it is topped with eggs. Maybe for the very reason, my Mom kept topping all the possible stir-fries with eggs, I suppose. Whatever, she makes…they are just amazing. Yep, I particularly loved this recipe of hers…where she blanches the cabbage briefly and finishes it with some scrambled eggs…making the ordinary dish, rich, instantly. Wow…you should try that sometime, too…
Ingredients:
Oil few spoons
Mustard seeds 1/2 spoon
Green chilies 2 -finely chopped
Ginger 2″ inch – grated
Onion 1 large – sliced
Salt
Turmeric powder 1/4 spoon
Cabbage – 1/4 kilo – finely chopped
Eggs 3

Ginger 2″ inch – grated
Onion 1 large – sliced
Salt
Turmeric powder 1/4 spoon
Cabbage – 1/4 kilo – finely chopped
Eggs 3
Method:
Heat oil in a wok, add the tempering spices, followed by chilies, ginger and onions. Fry real good and then add cabbage, cover and cook. Add salt and stir-in eggs, continue frying over high heat, until the moisture is all sucked up. Serve warm to go with your meals.
