Potato Fry:
Garlic Potato Fry. Fried Garlic Potato. Urulai Kizhangu Varuval. Allo Fry.
Ingredients:
Baby potatoes 1/4 kilo
Garlic 15 cloves – chopped and semi-cushed
Salt
Turmeric powder 1/2 spoon
Chili Powder 1-2 spoons
Mustard seeds 1/2 spoon
Cumin seeds 1/2 spoon
Asafoetida 1/4 spoon
Curry leaves 1 cup
Sesame oil 1/2 cup.
Method:
Scrape the skin off from the potaoes carefully. Wash and clean in running water.
Boil these potaoes for 10 minutes in microwave. Maybe use little salt to it.
When the potaoes are almost done and still firm…remove them carefully without any water. Throw the water away.
In a heavy bottomed iron skillet. A wide enough skillet…heat oil.
Add mustard, cumin, asafoedida, garlic and curry leaves. Fryt hem reall good. When they are aromatic…add salt, turmeric and chili powders too. Fry for few more minutes.
Now stir-in potatoes. Toss them to all sides. Let the oil and spices coat well.
Fry real good till they turn crispy on outside. Maybe over high heat.
When the potatoes are done….transfer it to display bowl.
Serve steaming hot as a side dish for Curd Rice or regular South Indian Meals.
