Baingan Masala/ Brinjal Masala Varuval

There is nothing special about this recipe…I always hated this big-large-eggplants, that are found in the market. Rarely, very rarely I buy them for a change. Always end up mashing them somehow…either chutney or burtha will be the recipe. For some reason, I couldn’t relate this large eggplants to my own home-land variety. Yeah, the native ones are small(exactly egg size and thats why the name) and deep in color. Anyhow, on the other day…unconditionally sliced them thin and prepared this masala in a regular fashion…though I was reluctant to serve anyone, but it turned out to be good. So, what the heck with the size, however weird its going to be in future(hybrid ones)…am gonna bag some, thats it:)
Ingredients:
Large Eggplant 1 – sliced thinly
Large onions 2 – sliced
Green chili 1 sliced
Ginger 1 ” grated
Garlic 1 minced
Tomato 1 small – crushed
Salt
Turmeric 1/4 spoon
Chili powder 1 spoon
Cilantro seeds powder 1 spoon(freshly prepared)
Cumin seeds – toasted & powdered 1 spoon
Garam masala powder 1/4 spoon
Oil 1 table spoon
Curry leaves and cilantro to garnish.
Method:
In a wide wok, heat oil. Add onion, ginger-garlic, green chili and tomato. Fry real good. Followed by eggplants.
Stir-fry for a while. Add salt, and all the spice powders. Cover and cook over low heat.
Once it is done, remove the lid and stir-fry over high for couple of minutes.
Remove from heat and serve to go with your rotis/chappathis.

Even i chop the brinjal into julians and just stir fry,this goes well with rotis. Urs looks really tempting.

Fab click malar,like to have baingan masala with biryani.Even i don’t like the eggplant here not just it’s huge but also the smell.Cannot help it i end up doing some brinjal koths for pongal

he he.. I feel teh same about eggplants…As the name goes baingun, it is believed to be without any gun (qualities) but still teh king of vegetables…
The recipes surely comes with a difference to the regular baingan ka bharta..
seems like a really simple recipe…can u believe i have avoided this veggie completely…hv never made anything with it… but now i better get started with some indian veggies…since we are heading back…wud keep this recipe in mind for a quick fix…thanks for ur wishes…hope to be active again by next month…:)
