Bitter Gourd Instant Pickle:
Ingreients:
Bitter Gourd 1-2 large
Salt
Turmeric powder less than a 1/4 spoon
Chili powder 1/2 spoon
Dash of Mango Powder(amchoor powder)
Jaggery/brown sugar 1-2 spoons
Dash of Mustard Seeds powder
Dash of Fenugreek seeds powder
Dash of coriander seeds powder
Mustard seeds 1/4 spoon
Asafoetida 1/4 spoon
Sesame oil
Lemon juice from 1/2 fruit(optional)
Method:
Cut the gourd into french fries size thickness. Add salt and let it sit for an hour. Then squeeze the liquid formed. Set aside.
Heat oil in a wok. Add mustard seeds and asafoetida. Wait till it pops.
Then add the gourd and salt. Cover and cook.
Once the vegetable is semi-done, add all the other ingredients too(except lemon juice).
Let it cook over medium heat without lid. When the raw odour of spices are gone, remove from heat.
Sprinkle lemon juice on the top. Serve as an instant pickle.
