Carrot Instant Pickle:
Vitamin A rich pickle.
Ingredients:
Carrots 2
Salt
Turmeric powder less than a 1/4 spoon
Chili powder 1/2 spoon
Dash of Mustard Seeds powder
Dash of Fenugreek seeds powder
Dash of coriander seeds powder
Mustard seeds 1/4 spoon
Asafoetida 1/4 spoon
Sesame oil
Lemon juice from 1/2 fruit(optional)
Method:
Cut the carrots into matchstick’s size thickness. Set aside.
Heat oil in a wok. Add mustard seeds and asafoetida. Wait till it pops.
Then add carrots and salt. Cover and cook.
Once the carrots are semi-done, add all the other ingredients too(except lemon juice).
Let it cook over medium heat without lid. Once the raw odour of spices are gone, remove from heat.
Sprinkle lemon juice on the top. Serve as a instant pickle.
