Kashmiri Pilaf

Ingredients:

Basmathi Rice/Any Long Grain Rice – 1 cup
Almonds – 10
Cashew nuts – 15
Golden rains – 20-25
Saffron – a pinch
Shredded beets
Pomegranate – few
Cherries – few
Dry rose petals – few
Cinnamon sticks 2
Bay leaves 2
White Onion 1 large thinly sliced
Ginger-garlic paste 1 spoon
Salt
Ghee 2 spoons

Method:

In a pressure cooker, heat ghee. Add cinnamon and bay leaves. Followed by onions & ginger-garlic, fry real good until raw smell of ginger-garlic is gone. Add salt and rice. Let the rice get well coated with oil(ghee). Add enough water and cook till tender. Then add saffron, fried nuts and garnish with fruits.
