Ingredients

  • 2 large potatoes – peeled, cubed
  • 1″ ginger, grated
  • 1-2 garlic beads, minced
  • salt to taste
  • 1 tsp chili powder
  • 1 tsp coriander powder
  • few curry leaves
  • 1/4 tsp cumin seeds
  • 5-7 tsp olive oil

Method

Cook the potato cubes in boiling water briefly. Drain the water and set-aside. In a wide skillet, heat oil. Add cumin seeds and curry leaves. When they splutter, add ginger and garlic to it. Toss in the cooked potatoes. Add all the spice powders. Fry them till golden brown over low-medium heat.
