Saffron Infused Vegetable Birinji Rice – Dig in!

Saffron Vegetable Pilaf:
Did I tell you this?!…my camera broke couple of weeks ago! This was the last recipe – I mean, complete pictures from it…and shortly after that, it gave away!! I got pretty mad for a while…to lose a handy devise, which was like a friend to me for the past 5+ years. Though, am not a good photographer, at least’ some of the clicks made a nice difference…by adding spice’ to my life.
Well, I took this perfect opportunity to treat myself with a new camera. And somehow, somehow…I figured that I shouldn’t be cooking anything new or sensational until then! Oh Yes, it worked like a charm:) As soon as I stopped putting those exciting stuff on the dinner table,….AK got alarmed! He knew that, its time to rush to the store!!!
Whoo – ah , I got a brand new camera:) The very good one’…that I always dreamed for!! I promise you all some good cooking:):)
[ hmmm, here is a trouble again...at least from now on...I should learn some serious photography:( ooops! ]
Ingredients:
Basmati rice 1 cup
Mixed vegetables 1 cup (carrot, beans, peas)
Coconut milk 2 cups
Green chilies 5 sliced
Garlic 10 cloves
Onion 1 large – sliced
Mint leaves 10
Salt
Saffron 1/4 spoon
Cinnamon 1 stick
Fennel seeds 2 teaspoons
Ghee 1 tablespoon.
Method:
In a wide vessel, heat ghee. Add the spices, followed by chilies, garlic, onions and mint leaves. Saute for few minutes.
Further add vegetables, ground saffron, enough salt…cover and cook briefly.
Stir-in rice and coconut milk. Cover and cook until the rice turns tender and fluffy.
Serve steaming hot with some spicy curry and raitha.
