Vegetable Pongal


Vegetable Pongal:

Veggies in Pongal. Rice-vegetable kitchedi. Vegetable kitchedi. Spicy Pongal.

Ingredients:

Raw rice 1 cup
Moong dal/lentils 3/4 cup
Mixed vegetables(carrots,beans,potato, peas)-1 cup
Salt
Turmeric 1/4 spoon
Cashewnuts 20-25 numbers
Whole pepper 1-2 spoons
Cumin seeds 1-2 spoons
Ginger 2-3″ size peeled and chopped
Asafoetida 1/4 spoon
Curry leaves 1 cup
Dalda/Ghee 1 cup.

Method:

In a pressure cooker,add rice + lentils, salt, turemric, few spoons of ghee and enough water. Pressure cook till 6 whistle sounds.

In a seperate pan, boil vegetables with enough salt for 5-8 minutes. Maybe till veggies are done.

In a sesonning pan, heat ghee. Add pepper and cumin…wait till it pops.

Then add ginger, asafoetida and cashewnuts…let them fry well. Followed by add curry leaves and fry till they are crispy.

Now to the cooked rice-lentils set up….mix boiled veggies and this above sesonning. mix well.

Serve steaming hot as a main dish! Tomato chutney or cilantro chutney could be a good choice for it!
