Vegetable Ishtu
I happened to taste this recipe for the first time at Taj, Kumarkoam (Kerela). The stew was so good, a perfect match with appam and iddyappam. Later, when I migrated to U.S…where I was forced to cook my own dinner! I usually call my Mom or brother for recipe ideas…but today, I googled for this recipe and was thrilled to prepare the heart-warming recipe at home. To my surprise, it tasted the same way at home too:) Here you go, my take on Veg Stew…

Ingredients:
- 2 cups mixed vegetables
- 2 cups fresh coconut milk
- 1 onion sliced
- 3 chilies, sliced
- 2″ ginger, julienne
- salt to taste
- 4 peppercorns, crushed
- 3 cardamon pods, crushed
- 1 bay leaf
- 1 cinnamon stick
- 2 cloves
- coconut oil few tsp
Method
In a deep pan, heat oil and add the whole spices. Followed by chilies, ginger, onions and vegetables. Saute for few minutes and add salt and coconut milk. Bring this to boil once and remove from heat. Serve warm to go with you appam or iddiappam. Enjoy.

Hello Bint,
I have no idea…where to shop for the biriyani flower in U.K. Many think biriyani flower is star anise…but I am talking about something other than that…its called birinji flower, and its totally different from star anise. Will try to post some pictures in future. Thank you.
