Shikampur Kebab – Enjoy with Masala Chai

Shikampur Kebab:

Ingredients:

Lamb – minced 2 cups
Chili 2 minced
Onion 1 large finely chopped
Ginger-garlic paste 1/2 spoon
Cilantro leaves 1 fistful
Egg whites from 1-2 eggs
Dry bread crumbs 1/2 cup
Oil for shallow frying.

Toast and Powder These:

Cloves 3
Cinnamon 1 stick
Cardamom pods 3
Cumin seeds 1 spoon
Cilantro seeds 1 spoon.

Method:

In a wide tray, bring all the ingredients (except oil, bread crumbs and egg white). Mix them and set aside for a while.

In a tray…spread bread crumbs. Now make equal parts out the dough. Dip them in egg white and roll them over the bread crumbs. Pat them into palm size kebabs. Repeat the same for all the remaining stuff.

Shallow fry these in hot oil, till golden brown.

Enjoy with a cup of warm masala chai.
