Badam Kheer – Something Creamy and Rich

Nothing could be as comforting as badam kheer to stir your mood for happiness. Sometimes, I feel the sole purpose of this rich creamy drink is to keep my spirits up. :) And, its not unusual for me to try a variety of sinful recipes! My collection of almond based sweets is really mind blowing to my family members! Well, anyway…I can very well vouch on this saying: ‘healthy’. Yep, its delightful, fresh and brings out the positive energy, or at least to me :) If you have any doubts about it…why don’t you try them yourselves and discover what it unfolds?!
Ingredients:2012-10-231
  • Half and half(or whole milk) 4 cups
  • Condensed Milk 1/2 cup
  • Granulated sugar 3/4 cup
  • Almond blanched 25-50
  • Saffron few strands
  • Sliced almonds for garnishing

Method:

  1. In a heavy vessel. Heat up 2 cups of water. Soak almond in it for 20 minutes. Remove its skin. Then wet-grind the same to thick paste…using limited milk. set aside.
  2. Using a mortar and pestle…wet grind saffron strands. Use milk for grinding. Set this aside as well.
  3. In a vessel, melt sugar with 1/4 cup of water. Bring it to syrup consistency. Further add a 2 cups of milk and almonds paste to it. Thicken them to perfection. Finish with saffron strands too.
  4. Chill the same and serve it short glasses. Enjoy.
