Stuffed Bread Pakoda – Chandni Chowk Treats

Carolina Cooking 440Well, I don’t fry food often. But, when I do, I make sure its damn good. :) Like this – Indian street food inspired stuffed bread pakoda. This is more an idea than a recipe. Yeah, for people like me, who hate to throw away the leftovers…this could be a delightful treat. If you know how to shallow fry stuff in your kitchen, then you’re in business. :) You can vary the stuffing however you like. Years ago, when I was a student in Delhi…this was my only choice of breakfast on the run. They are delicious, substantial meal and one can rely on them for their cheapness.

Ingredients

  • 4 bread slices
  • 1 cup potato masala
  • 1/4 cup besan flour
  • pinch of salt
  • pinch of turmeric
  • 1/4 1/4 chili powder
  • 1/4 tsp cumin seeds
  • pinch of garam masala
  • pinch of food color (optional)
  • oil for deep frying

Method

  1. Prepare a runny consistency batter using all the ingredients (except, bread, potato and oil). And, set aside.
  2. Now, heat the oil and wait till it comes to smoky hot.
  3. Meanwhile, cut the bread in desired fashion and stuff them up with leftover potato masala and dip them in the batter. The batter should cover the bread barely and it should not be soaking wet.
  4. Alright…now, fry these stuffed bread one by one in hot oil until golden brown or reddish brown. Then, leave them on kitchen towels briefly.
  5. Serve warm with ketchup or mint chutney.
