Broccoli Thoran – Pan Steamed!

Also Known As Broccoli Poriyal. Broccoli Kura. Broccoli Sabzi. Pan-Steamed Broccoli. Seasoned Broccoli. Tempered Broccoli. Indianized Broccoli Stir-Fry.

If you are looking for a quick and hassle free cooking; yet, expect it to be nutritious and great tasting one; do not go far and beyond to learn a perfect method for cooking! And not necessarily you will have to  hoard all those steamers and skewers!!! Its right there in your kitchen…most likely your grandmother would have fixed it a thousand times. :) Just turn to pan-steaming method! Surprisingly, this simple Indian technique is a better than baking n microwaving the vegetables! And, most importantly you don’t even have to own a special steam-cooker! With one sturdy lid to your pan, you can dish out number of vegetables in few minutes. Here you go, my take on broccoli.

  • 2-3 broccoli head, florets
  • 3 dry red chilies, crushed
  • salt to taste
  • 2-4 tsp grated coconut
  • 2 tsp olive oil
  • 2 tsp urad dal
  • 1/4 mustard seeds
  • 1/2 tsp cumin seeds
  • few curry leaves

Method

  1. In a wide skillet, heat oil. Add the spices and wait till they pop and splutter.
  2. Followed by broccoli florets, add salt and sprinkle a fistful of water. Cover and cook over low-medium heat. Give it like 4 minutes and not more than that.
  3. Remove lid and take it over frying on medium to high heat, add grated coconut as well, once the moisture is all sucked up, its done.
  4. Serve warm as a side dish to your South Indian meals.

  7. Something new yet something I am seriously considering. Sometimes I buy broccoli and am not sure what to do. Over here we used broccoli for Chinese style stir fried therefore I have to try this simple yet tantalizing recipe.
