Bulb Onion Achaar:
Onion Pickle. Simple and easy to fix achaar.
My friend Annie used to bring this pickle in her lunch box(when I was doing my Masters at Chennai) She cooks really well. She taught me several Srilankan recipes. All her recipes will be either fish or coconut. I liked her fish recipes especially. She keeps anything simple and tasty….no fancy ingredients, just 2-4 ingredients….flip, toss…fadafatt! Its Done!…kind of way. This is also one such recipe. Tastes better my age(time).
Ingredients:
Bulb Onions 4-6
Red peppers 4-6
White Vinegar 1 cup
Kosher/Sea salt(non-iodised) as per taste.
Method:
Peel the onion, keep it intact….do not remove the central stalk end/peduncle….to hold in shape.
Slice the red peppers. Retain its seeds.
Now clean and dry the ceramic jar….smear with spirit to keep it clean.
Fill the pitcher with vinegar, add salt and leave the onions and peppers in it.
Let this set-up stand for one whole weak.
When the onions turn to slightly yellowish color…its ready to eat.
Treat as a pickle.
