Annie’s Chicken Fry:
Kopra-Kodi Koora.
Ingredients:
Chicken 1/2 kili skin-on, bone-in & small chunks
Salt
Turmeric Powder 1/2 spoon
Chili powder 1 spoon
Oil few spoons.
To be Fried in Oil and Wet-Ground to Paste:
Coriander seeds 1 fistful
Poppy Seeds 2 spoons
Dry dessicated coconut 1/2 shell
Peppercorns 1-2 spoons
Oil.
Method:
Add oil in a pan, stir-in chicken, salt, turmeric and chili powders.
Add water….cover and cook till the chicken is done.
Now add the powdered items to it. Fry over high heat for about 4-7 minutes.
When oil shows up on sides…remove from heat.
The dry dessicated + fried coconut gives the rich aromatic temptation to this food. Its mild and makes good when served with plain steamed rice.
