Cilantro Cream Soup / Coriander Soup

Cilantro Soup:
Coriander Leaves Soup. Cilantro Cream Soup. Creamy Coriander Soup. Kothamalli Soup. Kothamir Soup. Malli Soup. Dhaniya Patha Ka Soup.
Ingredients:
Cilantro 1 bunch
Vegetable broth 1 cup
Half n Half(tetra pack milk)4 cups
Corn starch 2-4 spoons
Butter 1 cube
White pepper – as per taste
Salt – as per taste.
Method:
Wash and clean cilantro leaves. Chop them into 1″ size its along with stem.
In a deep vessel, heat butter. Stir-in cilatro bits and saute for few minutes. Then set aside.
In the same pan, fry few spoons of corn starch. Add 1 cup of vegetable broth. Allow this to boil.
When it reduced to half. Further add 4 cups of half and half. Bring this to boil….allow this to thicken like a creamy soup’.
Now stir-in wilted cilatro bits. Boil for few more minutes.
Serve warm in a serving bowl. Sprinkle salt and pepper. Enjoy!
