Eggplants-Shrimps Masala / Brinjal-Prawns Masala

Other Names: Kathirikai-Iral Thokku. Aubergine-Prawns Curry. Chingri-Baingan ka Subzi. Chemmeen-Kathirika Kari.
Ingredients:
Eggplants 6-8 sliced
Small shrimps 1 cup
Green chili 1 chopped
Onion 1 chopped
Ginger-garlic paste 1 spoon
Tomato 1 crushed
Salt
Turmeric 1/4 spoon
Chili powder 1 spoon
Oil few spoons
Mustard seeds 1/4 spoon
Cumin seeds 1/4 spoon
Curry leaves few.
Method:
Heat oil in a wok, add the tempering spices, followed by ginger-garlic, chilies, curry leaves, onions and tomatoes. Fry till fragrant.
Now add sliced brinjal to it…add salt, turmeric and chili powder. Cover and cook till tender.
Once the veggie is done, add shrimps and stir-fry over high heat.
Garnish as you please. Serve warm to go with your meals.
