Fenugreek Greens Rice – Therapeutic Food






Fenugreek Greens Rice:

Many agree that traditional Indian therapeutic food(pathyam uvavu/pathiya unavu) is very comforting and therapeutic. They are usually nourishing, anti-inflammatory, easy on digestion and definitely less in calories. Today many researchers are studying about Indian therapeutic food to lower the blood glucose level(diabetes).

Ingredients:

Fenugreek greens (leaves and tips) 1 bowl full
Onions 2-3 sliced
Green chili 1 – deseed and slice
Ginger 1″ grated
Salt
Turmeric 1 pinch
Chana dal 2 spoons
Urid dal spoons
Cumin seeds
Mustard seeds
Dry red chili 1 crushed
Ghee 4 spoons.
Rice to serve with.

Method:

Put a large skillet on the hot stove. Melt ghee. Add mustard, cumin, dry red chili, chana and urid dal. Wait till they get crisp.

Add onions, chilies and ginger…fry real good. Add salt and turmeric too.

Followed by greens, stir-fry real good.

Serve warm to go with your rice.
