Malar’s Signature Dish – The Language Of Love

What is the best expression of love? People show their affection in one or in many ways! Well…spending quality time together comes as first choice; exchanging gifts, works for materialistic people; acts of care and service is definitely a way to go; physical touch, caresses and patting, tops everything up; and last but not least the words of affirmation…for dumb heads like myself. :) Indeed, words works wonder in me. :)

But, you know what? There is still one more form of love (although it could be categorized under acts of care and service…this is of bit different league). The presentation of food. Have you ever witnessed a girl preparing a detailed cooking for her loved one?! If you did…you would better agree with me. The presentation of food has always been my way of expressing the love. :)

Ingredients

  • 1 lb goat’s meat, cooked to tender
  • 2 cups short grained rice
  • 5 cloves
  • 2 cinnamon sticks
  • 1 tsp fennel seeds
  • 1 star anise
  • 2 bay leaves
  • 1 tsp peppercorn
  • 1 tsp cumin seeds
  • 5 green chilies, slitted
  • 1 red onion, sliced
  • 1-2 tsp ginger-garlic paste
  • 10 mint leaves
  • few cilantro
  • 1 large tomato, sliced
  • 1 lemon juice
  • 1-2 Tsp curd
  • salt
  • 1 tsp chili powder
  • 1 cup ghee

Method

In a wide pot, heat ghee…throw in dry spices and followed by chilies, onions and wait till they splutter. Later add ginger-garlic paste and fry till the raw odor leaves the pan.Now, add tomatoes, curd, mint and cilantro to it. Further add meat alon with its broth plus salt and chili powder. Continue cooking until the moisture is all sucked up. Finally add rice and enough water. Cover and cook till tender. Finish it up with lemon juice and more ghee. Voila…treat yourself. :)
