Ingredients:
Pasta
Vegetable broth
Olive oil
Black Pepper Powder
Beans:
Garbanzos, Red Kidney beans, Black Eye Beans, Double Beans, Soya beans, Spit peas, Tiger Beans, Lentils, Fresh Peas…
Herbs:
Fresh Parsley and Basil, Dry Oregano, Basil and Thyme,
Vegetables:
Beans, Zucchini, Squash, Celery, Spinach, White Onions (minced), Tomatoes (crushed)
Method:
Soak the beans overnight and cook till its done.
Heat oil oil and saute minced onions, and vegetables (except spinach). Then add cooked beans to it.
Further add crushed tomatoes, vegetable broth and dry herbs.
Add pasta as well and continue cooking over low-medium heat until the pasta is done.
Add spinach, parsley and ground pepper to the same and remove from heat.
Serve warm in a soup bowl along with garlic bread.
