Muttai Kuzhambu

Also Known As: Beaten Eggs Kara-Kuzhambu. Udaithu Oothiya Muttai Kuzhambu. Kodi Gudilu Pulusu. Beaten Eggs in Spicy Hot Tamarind Gravy. Anda Imili Ka Salan.

  • Country Eggs 4
  • Green chili 1 sliced
  • Red onion 1 chopped
  • Garlic 10, crushed
  • Ginger 2″ grated
  • Tomato 1 chopped
  • Jaggery tsp
  • Salt
  • Turmeric 1/2 tsp
  • Chili powder 1 tsp
  • Sesame oil 1/4 cup
  • Fennel seeds 1 tsp
  • Cumin seeds 1/4 tsp
  • Cinnamon 1 stick
  • Cloves 3
  • Cilantro leaves few
  • Curry leaves

Method:

  1. In a deep pan, heat few spoons of oil. Add spices, followed by chilies, ginger, garlic, onions and tomato. Fry till they turn to golden brown.
  2. Now add salt, turmeric, chili powder and sugar. Stir them well. Later add tamarind paste and 2 cups of water. Cover and cook over medium flame.
  3. Once the gravy consolidates…break-in eggs. Care should be taken while dropping egg contents. Do not break too hard…avoid shells getting-in. Also do not load them at one place.
  4. Allow it to boil once. Do not stir the gravy as well. Try to cook over medium heat…till the eggs are done. Maybe cover and cook over medium heat.
  5. Serve this along with plain steamed rice. Run a spoon full of sesame oil over it…..just before serving.
