Paal Kowa / Srivalliputhur Paal Kova

Ingredients:
Whole milk 2 liters
Half and half/tetra pack milk – 1 liter
Sugar 2 cups
Ghee few spoons(optional)
Cardamon seeds powder 1/2 spoon
Salt 1 pinch.
Method:
In a non-stick and heavy bottom pan, grease little ghee.
Add whole milk to it. Boil them over medium heat, with occasional stirring.
Let it reduce into half (that is 2 liters becomes 1 liter).
Now add half and half (tetra pack milk in India). Let them boil to over medium heat.
Now on the whole…..let the milk really reduce into 1/4 of its original content. One should constantly stir it. Make sure that the bottom of the vessel is not stuck with milk.
Once it comes to 1/4 reduced stage, add sugar cardamon seeds powder and little more ghee. Stir well. Maintain over low-medium heat. Let it come to semi-solid form. Turn off your stove.
Do not heat beyond this point….the solid milk may burn/turn to deep brown color.
The greasy ghee helps from not adhering to the vessel. Let it be in semi-moist and semi-solid form. Serve after it cools. Hey but do not refrigerate them. It becomes hard when refrigerated.
One can garnish this with sliced pistachios nuts.
