One of the best things I do to myself is to cook a healthy meal, despite of all the odds!! I think it comes to me naturally to navigate through, even the most tempting foods! Guess, it must be an innate talent…I must have inherited some weird gene from my folks! Yeah, finally some genetic lottery to be proud about.
So, I got this rigorous diet thing going on…that revolves around healthy choice! This week’s bounty harvest from my garden is ‘garlic’. I was completely taken by surprise to see my first harvest…Yep, burying only a few bulbs in top-soil did a wonderful trick. Here, you go…the recipe for ‘Poondu Thokku’.
Ingredients:
- 3 heads of garlic, peeled (sliced or crushed or whole)
- 1 bulb onion, chopped
- 4 large juicy tomatoes, crushed
- salt
- 1/4 tsp turmeric powder
- 1 tsp chili powder, or even more…as you please
- 2-4 Tsp sesame oil
- 1/4 mustard seeds
- 1/4 cumin seeds
- 1/4 asafoetida
- few curry leaves
Method:
Nothing fancy, its very usual. Do the tempering and add onions and garlic. Fry real good or until aromatic.
Further add tomatoes, salt, turmeric and chili powder. Cover and cook. Once the tomatoes wilt and turn bit pulpy. Remove the lid and continue cooking.
Maybe maintain your stove over medium heat. Once the oil shows up on top, remove from heat.
That’s it, friends you have done a wonderful job today…pat yourself on the back.
Serve to go with plain steamed rice or idlies or dosas. Enjoy.
