Seem Paal/Kadambu Paal in Tamil/Junnu in Telugu. Cow’s lactating milk Recipe.
Its again a kind of ‘Consolidated Milk Recipe. or Milk Kova/Paal Kova. Its prepared with Cow’s first milk.(The milk produced after a calf is born….for first 5-10 days) Its a extra heavy milk rich in vitamins and protein.
You may wonder whats the differens between ‘Seem Paal’ , ‘Thirattu Paal’ and ‘Junnu’. Though they all are preapred from ‘Cow’s first milk’ there is slight difference in the method. For Instead, here in Tamizhar Style…..its steam cooked and not stove top. That does makes the diffence inthe taste too….though all these recipes have same kind of ingredients.
Ingredients:
Cow’s first milk 1 litre(farm fresh)
Regular whole milk 1 litre
Sugar/Jaggery 1-2 cups
Cardamon seeds powder 1 spoon
Cashew nuts chopped 1 cup
Dry grapes/raisins 1 cup.
Method:
In a large bowl add cow’s first milk and whole milk. I am adding in 1:1 ratio. Since sometimes….if you just use ‘cow’s first milk….it will turn up too hard. So its better to add regular milk with this.
Now stir in sugar…let them dissolve well. Add cardamon seeds powder/cashew nuts and raisins too to it.
Pour this milk into small cups or jelly preparing molds/ even muffin tray/idly trays.
Now steam cook them in a pressure cooker for 10 minutes. One can even fill them in desired shapes cups/tray and then steam cook it.
Then invert the molds/cups…..a jelly like ‘Seem Paal’ is ready.
Serve chilled. It turns out into very soft-jelly like consistency here inthis method.
