There are some winner recipes that are liked by all! And, I am sure that ‘Tomato Thokku’ would be definitely on that list. Or any tomato based dish for that matter! So, here is something, that I fix on the periodical basis! Especially during spring, when tomatoes ripe to the fullest.
Ingredients:
- Country Tomatoes 8-10 crushed
- Garlic 1 whole head grated along with skin
- Turmeric 1/4 spoon
- Asafoetida 1/4 spoon
- Salt to taste
- Turmeric powder 1/2 spoon
- Chili powder 1 spoon
- Mustard seeds 1/4 spoon
- Fenugreek 1/4 spoon
- Curry leaves few chopped
- Lemon juice few spoons
Method:
In a deep wok, heat oil. Splutter seasoning items. Then followed by garlic, fry real good till fragrant.
Add tomatoes salt, turmeric and chili powders. Cover and cook. When all the moisture has left the pan and when oil shows up on the top, remove from heat.
Then add lemon juice to it. Store in a ceramic jar or glass jars! Serve to go with idlies, dosas or chappathis.
