I love this new Mexican fast food joint in the town – Chipotle. Where we have wide variety of choice…that is vegetables as toppings for rice! Now, you imagine the excitement…finally at least once in a while, I could stop for decent lunch at fast food place…without guilt (damaging the purse or health)!
So, when I tried their lemon rice…it was too good to be a ‘fast food meal’…vegetables, chicken and rice stir-fried to perfection and laced with lettuce strips, lemon juice, cilantro and cheese. A cup of avocado and sour cream did the rest of wonder. Every good recipe, with easy choice of ingredients…should be repeated at home:) So, here you go…
Long grain rice 1 cup – cooked
Mixed vegetables (Asparagus, broccoli, peas, corn)
Grilled chicken breast -cut into strips
Cayenne pepper powder to taste
Salt to taste
Oil few spoons.
Onion 1 chopped
Tomato 1 chopped
Cilantro few chopped
Lettuce leaves – chopped
In a wide wok, heat oil. Stir-fry veggies and chicken, add salt and chili powder. Now stir-in rice and mix well.
Further add all the ingredients mentioned above and mix well. Serve as a main course with sour cream.
