Baby Potato & Bell Peppers Masala




Alu-Simla Mirchi ka Curry:

Other Names: Urulai Kizhangu – Kudai Milagai Masala Kuzhambu. Baby potato – Capsicum Masala.

It has been a while’ I cooked with great energy…severe carpal tunnel syndrome:( My wrist hurts like nobody’s business! I have been managing somehow’ to flip and flop few things in the kitchen…and surprisingly, this turned out good. I couldn’t wait to share it with you all.

Ingredients:

Potatoes 7-10 boiled n peeled
Bell peppers 3 – chopped roughly
Onion 1 large – grated
Ginger-garlic paste 1 spoon
Tomato 1 large – puree
Salt
Turmeric 1/4 spoon
Chili powder 1 spoon
Coriander powder 1 spoon
Cumin seeds powder 1/4 spoon
Cashew nuts 5 – powdered
Garam masala 1/4 spoon
Oil few spoons.

Method:

In a wide wok, heat oil. Add all the wet-ground ingredients, fry real good until raw odor leaves the pan.

Then add the powdered ingredients and continue cooking over high heat, until oil shows up on the sides.

Now stir-in potatoes and capsicum. Add enough water. Cover and cook till tender.

Serve warm to go with chappthis or rice.

    How are you? I like this recipe and the spicing. The Potato available now are no good for boiling and peeling. I have to wait till Mid october, when new crop of potatoes arrive from other side of the Himalayas. In USA, I understand you get varieties of potatoes!
