Broccoli Cream Soup – Southern Style

If you are wondering what’s the story behind this recipe? I am always fond of creamy soups. They are just perfect to warm you up on cold winter days! Nothing could soothe you more than a soup, when flu strikes. I have been making it like a ritual to simmer a pot of soup…whenever I am left alone (which is most of the time). As I stir through the concoction…I dive into the memories of my loved ones and the conversations we had had. So, basically its not just the soup, a comfort in a bowl. :)

Ingredients

  • Fresh cut broccoli florets 1 cup
  • Veg or chicken broth 1 cup
  • Corn Starch 2-4 spoons
  • All purpose flour 2 spoon
  • Half n Half(tetra pack milk)4 cups
  • Butter 1-2 cubes
  • Salt as per taste
  • White pepper to sprinkle
  • Grated cheese to garnish(optional)

Method

  1. In a shallow pan, melt butter. Add flour and corn starch to it. Saute’ them for 2 minutes or maybe till they turn to golden color.
  2. Now add chicken or veg broth to this. Bring it to boil. When it is almost half the way reduced, add half and half and continue boiling.
  3. Allow this to achieve heavy soup consistency. Now stir in cut broccoli florets. Bring this to boil. Do not over-cook the florets.
  4. Serve warm with melted cheese on it. Sprinkle salt and pepper before serving. Enjoy!
