Cluster Beans Masala / Kothavarankai Masala





Kothavarakai Masala Varuval:

Gorichikudukaya Masala Kura. Guar Phalli Ki Subzi.

I happened to taste this cluster beans masala from an unknown Restaurant at Kumbakonam…Recently, I have been to my home land and took a long-trip with my family…visiting various temples in South Tamil Nadu. We had quite an experience, I encountered varied culinary perfection through out the trip. As I see, not only our culture, accent…I think our cooking style also changes every 100 miles. So, here you go’ the one which I enjoyed…

Ingredients:

Cluster beans 1/2 kilo
Fennel seeds 2 spoons – crushed
Green chilies 3 crushed
Ginger 2″ minced
Garlic 4-6 cloves minced
Onion 1 large grated
Tomato 1 large crushed
Salt
Turmeric powder 1/4 spoon
Chili powder 1 spoon
Coconut 4 pieces – grated
Oil few spoons
Curry leaves few.

Method:

Trim the ends of the veggie and remove the strings…if present. Chop them down to desired size. Now, cook this vegetable in boiling water, till tender. Then, discard the water and retain the veggie.

Heat oil in a wok. Add the fennel seeds powder plus curry leaves. Wait till it sizzles a little.

Followed by all crushed ingredients plus powdered spices….fry real good, maybe till the raw odor of the spices are gone.

Now, stir-in cooked veggies and stir-fry them over high heat. Once it is fragrant, its done…remove from heat.

Serve to go with your chappathis or steamed rice.
