Crunchy Kettle Cooked Potato Chips

This is one of my oldest recipe in the draft…that I failed to publish! Well, the picture may be bit amateurish, but you know what? The chips were indeed ‘super-crunch’! Yep, I sliced them extremely thin as possible using a sharp vegetable peeler and fried them in hot oil, just few at a time and drizzled with enough salt and chili powder. To my surprise, the resulted chips was too good!

How are you? A very happy New year to you. I am now exploring what all did I miss during my Sahara sojourn and relieved to see that I havent missed much at your blog. Guess you have been quite tied up.
I like chips. I think frying few at a time is the key. Even soaking the chips inn bit of salt and then squeeze out the water gives a good crunch.
I am home after 3 months but have to set sail again in 10 days time. The very thought of holing up in a 10X10 porta-cabin and without internet is pretty scary.
