Home Made Chili Sauce – More than a Condiment

Also Known As: Home Made Hot Sauce. Home Made Sriracha Sauce. Hot Chili Sauce. Milagai Thokku. Milagai Saandhu.

Hot sauce is one of the most favored condiment topped on fries, snacks, rice and what not! It adds that extra zest of culinary heat to the otherwise, basic appetizers and meat products. There are so many varieties to choose from. And people prefer it mild, hot, hotter…so the recipe changes greatly from region to region. Anyway, most are created from a combination of chili peppers and other ingredients such as garlic, vinegar and salt. So, its easy to make your own hot sauce using fresh or dry chili peppers. The good part is, it has a good shelf life period. Thus, one can prepare a huge batch and forget all about it without much to worry. :)

Note Okay, now…let me be straight and transparent with you all, just because you’ve have made a big jar full of hot sauce…now, don’t get too generous on that!! When I say its ‘hot‘, it really is ‘hot n hotter‘, please use sparingly on the food to enhance flavor n enjoy. :)

  • 1 cup dry red chilies
  • 15-20 garlic cloves
  • 1/4 vinegar
  • 2 tsp sea salt
  • pinch of sugar
  • 1 Tsp olive oil

Method

Soak the dry red chilies in vinegar for at least 4-5 hours. Then, wet-grind all the ingredients together, coarsely. Do not puree them completely; when it is left bit chunky and flaky its very useful in regular day-to-day cooking than as a mere condiment to top on the appetizers.

    Have used a similar kind of paste while making Schezwan prawns.. The flavor itself is hot and unique.. Love this :)
