Eggplants in Yogurts based Sauce:(Kashmir Style)
Other Names: Kathirikai Mor Kuzhambu. Vangaya Perugu Pulusu. Baingan Kadhi. Kathirika Mor Curry.
Ingredients:
Indian eggplants 5-7 slitted twice in the middle
Fresh, sweet yogurts (I mean not sour) 2-3 cups
Ginger 2″ grated/minced
Green cardamom 3 pods crushed
Kashmir red chilies 3
Cumin seeds 1 teaspoon
Salt
Kashmir Chili powder 1 teaspoon
Ghee/butter for pan frying.
Method:
Deep fry eggplants in ghee/ butter till crisp, set aside.
(or )
One could pan-fry, grill or broil the eggplants…as you wish.
In a wide pan, heat oil. Add cardamom, cumin seeds, red chilies and eggplants. Further add salt and stir-fry briefly.
Then, add chili powders and yogurts, mix well and boil over low heat for few minutes and remove from heat.
Serve to go with you pilaf or plain rice.
