Mulai Payaru Poriyal – Going All Healthy:)


Sprouted Green Gram Stir-Fry:

Other Names: Mung Beans Sprouts Stir-Fry. Mulai Payiru / Pachai Payiru Sundal.

Ingredients:

Green gram 1 cup
Green chilies 3 chopped
Ginger 1″ chopped
Onion 1 large chopped
Tomato 1 small chopped
Salt
Turmeric 1 pinch
Mustard seeds 1/4 spoon
Cumin seeds 1/4 spoon
Olive oil few spoons
Cilantro few to garnish.

Method:

Soak the lentils overnight in enough water. The next day, drain the excess water and spread the lentils in a wide trough, cover with muslin cloth/ sheet. Leave this set-up for a day…once the sprouts show up, its ready.

Heat up a skillet, add oil. Add the tempering spices, followed by chilies, ginger, onion, tomato, salt, turmeric and sprouted lentils.

Cover and cook briefly, until the lentils are done soft. Garnish with cilantro leaves.

Serve warm as a side dish.
