Madras Curry Powder

Creating my own spice blends have been such an adventure up to date. Two best things has led me to blend my own spices! Number one: I compulsively end up buying wholesome spices at various ethnic stores. Number two: I would like to take time to prepare everything from scratch. Well, if you ask me…it has been always fun to mix and match various ingredients. And, these little seasonings goes a long way into my dishes to bring that ‘WOW’ factor.
Ingredients
- 2 Tsp coriander seeds
- 1 Tsp fennel seeds
- 1/2 Tsp fenugreek seeds
- 1 Tsp cumin seeds
- 3 dry red chilies
- 1/4 tsp peppercorns
- 1/2 tsp turmeric powder
Method
In a wide pan, bring the whole spices and toast them over low-medium heat. Make sure the pan is wide enough to spread these spices. Also often shake the pan and toss the spices to get toasted thoroughly. Once it is fragrant, remove from heat and allow this to cool down to room temperature. Then, add turmeric powder to it. Now blend these to fine powder using a spice grinder. Store in an air-tight jar for later use.
