Malai Chingri – Shrimps in Creamy Sauce

Also Known As Shrimps Malai Curry. Malai Prawns. Iral Kurma. Iral Stew. Shrimps in Coconut Sauce. Prawn Coconut Curry. Prawns in rich coconut sauce. Creamy Shrimps. Malai Jhinga. Chingri Malai Curry.

This is one of those dishes I sort of threw together. Grabbed couple of fresh ingredients to work with…fresh shrimps, picked right out of the ocean; and instantly squeezed coconut milk. Then I just let the mad scientist in me to explore. :) So, I knew this all along…that’s its gonna be a perfect dish to feature. And the result was fantastic to my expectation…each bite had such a complexity and depth of flavor; and its worth all the hours I spent simmering the creamy sauce! The shrimps remained rich and succulent in the coconut ocean, I created; and yet without adding  heaviness to the tummy! So, I believe its a good way to use up your fresh catch. Well…now, I can’t explain the exact reason why it turned out magical! But, I can show you some poorly made pictures to testify though!

Ingredients

  • 1 lb shrimpsWallace212
  • 1 cup thick coconut milk
  • 1 red onion, grated
  • 1 tsp ginger-garlic paste
  • 1 tomato, puree
  • salt
  • 1/4 tsp turmeric
  • 1 tsp chili powder
  • 1 bay leaf
  • 3 cardamom, crushed
  • few tsp of oil
  • cilantro to garnish

Method

  1. In a wide vessel, heat heat. Add bay leaf and cardamoms. Followed by onions and ginger-garlic paste. Wait till the raw odor leaves the pan.
  2. Then add tomato puree and all the powdered ingredients to it. Saute for few minutes of until the oil shows up on the sides.
  3. Add coconut milk and shrimps, cover and cook over medium heat for few minutes.When the sauce is bubbly, remove the lid and continue cooking.
  4. Allow the sauce to thicken, finally add the cilantro leaves and remove from heat.
  5. Serve warm along with steamed rice or rotis.

    My mil also makes somewhat similar shrimp curry :) But with ground coconut rather than milk :) Urs look inviting & creamy :)
