Yet, another everyday dish that goes with regular South Indian meals. Sometimes, I feel stir-frying veggies is the best method to make vegetables, its easy to fix and tastes just right! Back home in India, we had a great choice…when it comes to various gourds and wild greens. But, when I moved to America, I started to be content with the locally raised squash and winter melons. So, that’s why I become very happy…whenever I spot my native vegetables in the Indian grocery store, here. Well, they are bit pricey, but worth’s it to bring back those fond memories of home.
Ingredients:
- Snake Gourd 1, chopped
- Green chilies 3 chopped
- Salt
- Turmeric powder 1 pinch
- Asafoetida 1 pinch
- Urad dal 2 spoons
- Mustard seeds 1/4 spoon
- Curry leaves few
- Oil few spoons
- Grated coconut, few tsp
Method:
In a wide pan, heat oil. Add mustard seeds, asafoetida, urad dal and chilies. Let this pop well. Add chopped veggies plus salt and turmeric. Cover and cook for couple of minutes. Then, remove the lid and continue stir-frying over high. Garnish with coconut and remove from heat. Serve to go with your South Indian Meals.
