Tindora Chutney – Andhra Special

Also Known As Tindora Chutney, Kovaikai Thuvaiyal. Dondakaya Pachadi. Ivy Gourd Chutney. Gherkins Spread.

This super-fresh spread can be topped over steamed rice or pulkah rotis. Its delicious, high-fiber and nutritious; will be a good choice to make the picky eaters to eat their vegetables. And, for other foodies out there, its another nice experience. :)

IngredientsMississippi - Kitchen

  • 2 cups ivy gourd
  • 5 dry red chilies
  • 1 tsp coriander seeds
  • 2 tsp urad dal (black lentils)
  • 1 tsp dry coconut
  • 1 tsp brown sugar
  • 1 tsp tamarind
  • 1 inch ginger
  • salt to taste
  • 1 pinch asafoetida
  • few curry leaves
  • 1-2 tsp oil
  • tempered spices to garnish

    Method

    1. In a wide heavy bottomed pan, heat oil.  Add dry toast all the ingredients mentioned above, except tempering spices and vegetables.When it is aromatic, set aside.
    2. Add the sliced vegetables in the same pan and stir-fry until it wilts and reduces, remove from heat.
    3. Blend and puree the vegetables along with the dry roasted ingredients.
    4. Further, add the tempering spices to it and heat on a skillet until the moisture is all sucked up.
    5. Allow this to cool down to room temperature, store in an air-tight container for later use. Additionally, serve warm to go with your meals.

    Easy & healthy chutney :) But very sadly, I don’t get tindora’s here :( And it’s one of my fav veggie :) And u know what, ppl who hate say that only animals & not humans who have them..
