Tea Time Vanilla Cake – A Sweet Diet

Well, congratulations on your 25th birthday (for the past 3-4 years), new car with zero interest, brand new Swedish wife, your in-laws moved far away, you found a cute boyfriend, your pet puppy can now fetch, you won $50 by gambling…or whatever! I am really really happy for you. :) But, you just take these sweet treats away from me, please. Thank you.  Grrrrr…I am on diet. I won’t eat sweets for the next couple of years. Yeah, you heard me right! I can’t take it anymore, guys. The each time you are all in great mood…I put on a ton of pounds, straight to my tummy! And, during those weekend slumber parties…my glucose level skyrockets even more!! Yes, to the level of making sugar cubes out of me! I am done, am done.

Day 6 – What’s wrong if I sneak one or two sweets, once in a blue moon!?

Day 7 – Thank God, no one noticed the last piece of chocolate chip cookie that was stuffed in a hurry. :)

 Ingredients

  • 1 cup all purpose flour
  • 3 large eggs
  • 1 stick butter
  • 1 cup water
  • 1 tsp baking soda
  • 1/2 tsp baking salt
  • 2 Tsp vanilla extract
  • pinch of yellow food color

Method

Beat softened butter and eggs together over high for two minutes. Then, add all the other ingredients and beat for another 4-5 minutes on high. Often spoon in the splattered batter. Now, turn them in, into a oven safe cake pan. Needless to say, you need to grease the pan! And, set the oven temperatures to 350 degree Fahrenheit. Bake for at least 28-30 minutes. Stick a tooth pick in the center…if it comes out clean, your cake is done. Serve warm or chilled to go with you evening tea. Enjoy. :)
