Chicken Broth & Chicken Stock: (Totally Indian Way)

What is the difference between chicken broth and chicken stock? Not that two are entirely different! Both broth and the stock calls for the same vegetables, spices and herbs…just the simmering time is less and more respectively. This is one of my kitchen essentials…I usually prepare them whenever I buy whole bird…I cut and freeze the joints, chunks and cubes separately for cooking! While, I retain the scrape bones and meat for making this stock! Its really not very hard to make and its certainly is better than the store bought one. Believe me…absolutely no MSG, heavy salt or any form of preservatives added.

As the rainy season is already here…I was looking for chicken broth in the fridge for various recipes. By the way was even wondering whether, I have I blogged about it?! I scrolling through my blog up and down to find the recipe…oooops, looks like I didn’t post one after all I took this picture almost several eons ago and totally forgot. :( Well, the picture may look dull and unpleasant, but recipe was a grand success. Here you go…

Ingredients:

  • Chicken bones and chunks (I used hen)
  • Green chilies 1-2
  • Onions 2
  • Ginger 4″ chopped
  • Garlic 1/2 head
  • Tomato 1 (optional)
  • Salt
  • Turmeric a pinch
  • Bay leaves 4
  • Peppercorns 4 spoons
  • Cumin 4 spoons
  • Coriander seeds 4 spoons
  • Star anise 1
  • Cloves 3-5
  • Cardamom 2
  • Marati mokku 1
  • Cilantro 1/2 bunch
  • Curry leaves few

Chicken Broth:

Simmer everything together for 15-20 minutes. And decant the broth and store it in the refrigerator for later use. It can be invariably used for a variety of recipes, such as pilaf, biriyani, korma, stew, soup etc.

Chicken Stock:

Continue boiling for at least 4-6 hours. Hmmm, remove the vegetables in between…probably at the end of first hour, as they tend to loose their aroma and shape. Stock is bit rich and dense in my opinion makes great addition to the thick gravies, sauces and I also sneak them in stir-fries.

  2. Nice recipe of stock…didnt know so many ingredients needed for it..i always use stock cubes only because of my laziness but this time ill do home made one..

    When I end up with good quantity of broth or stock (long boiled), some I cube up in the deep fridge,for long pre4servation, particularly prawn broth/stock

    Yeap..U are right nothing like homemade stock…..I always keep it handy.My DD loves clear chicken soup, so specially in cold season got to have it….BTW thankx for visiting my space….U have a big collection here…good…
