Sarson ki Saag Kadhi – Mustards Greens in Buttermilk Gravy







Kadugu Keerai Mor Kuzhambu:

Ingredients:

Mustard greens 1 bunch
Yogurts 4 cups
Salt
Turmeric powder 1/4 spoon
Asafoetida 1/4 spoon
Oil few spoons.

Wet Grind these to a Thick Paste:

Pepper 1-2 spoons
Green chilies 5
Thoor dal 1 cup
Tomato 1
Ginger 3-4 inch size. peeled.
Garlic 4 -5 cloves

For Tempering:

Mustard seeds 1/2 spoon
Cumin seeds 1/4 spoon
Urad dal 1/4 spoon
Asafoetida 1/4 spoon
Dry red chilies 3
Curry leaves few
Oil few spoons
Oil for shallow frying.

Method:

Heat oil, in a wok. Saute greens for a while…until oil coats to all sides.

Now add wet ground paste to it. Fry them till they loose their raw smell.

Further add asafoetida, salt, turmeric and yogurts. Mix them well. Let them come to 1-2 boil.

In a separate pan, heat oil. Add mustard, cumin, asafoetida, red chilies, pepper and curry leaves. Fry for a while…till they pop and splutter. Now run this seasoning over the gravy made above.

Serve warm along with plain steam cooked rice.

    Kadhi is really tempting!!!.I always prepared kadhi with spinach but with mustard leaves…very interesting!Thanx for sharing!!!

    Adding toor dal will reduce the bitterness of mustard greens, and becomes thick and healthy gravy, sure buttermilk also enhance flavor. On the whole kadhi looks perfect.

    Such a nice preparation, great way to cook mustard. I must try this but will have to wait till winter again, won’t get mustard leaves now, will try with some other green till then.

    Very yummy…. I have saved this for my future encounter….. Because till date I had only heard of these leaves & never got to see or taste this prep…… I was always like Sarson Da Saag!!!!! But now that I see it here…. I realize what have I missed….. Will not for long…. will surely prepare it your way & savor it too….. LOOKS VERY YUMMY!!!!

    This is great dish..never tried KaDi with Saroso ka sag. I can imagine, it will be of great taste.
    Must try if the sag is still available.
