Mixed Vegetables Couscous Khichdi

Ingredients:
Wheat Cous cous – 1 cup
Mixed vegetables – 2 cups (carrots, beans, peas, corn kernels)
Green chilies 3-6 sliced
Garlic 6 cloves chopped
Purple onion 1 large chopped
Salt
Mustard seeds 1 spoon
Cumin seeds 1/2 spoon
Olive oil 1/4 cup.
Method:
Heat oil in a wide vessel. Add the tempering spices followed by chilies, garlic and onions. Fry briefly.
Add salt and vegetables. Cover and cook for 5-7 minutes, or until veggies are half the way done.
Now add 2-3 cups of water to it and bring this to boil. Add couscous, cover and cook over medium heat.
Once the cous cous is done(which is in about 3-5 minutes) and becomes fluffy…remove from heat.
Serve warm as a main course.
