Vaathu-Kari Kuzhambu. Vaathu Milagu Kuzhambu. Duck in Rich Pepper Sauce.
Onion 1 large – finely chopped
Garlic 7-10 pods crushed
Tomato 1 large crushed
Turmeric 1/4 spoon
Chili powder 1 spoon
Pepper powder 1 spoon
Cilantro leaves few
Oil few spoons
Cumin seeds 1/4 spoon
Curry leaves few.
In a wide wok, heat oil. Add cumin seeds and curry leaves. Wait till it sizzles a little.
Further add garlic and onions, fry real good until reddish brown. Then, add tomatoes, salt, turmeric, chili and pepper powder.
Now, stir-in meat…cover and cook. Add 2-4 cups of water and continue boiling over high heat.
Once the meat is done till tender and gravy thickens and oil shows up on top…its ready.
Serve warm to go with steamed rice or rotis or chappathis.
