I understand that, there isn’t anything different in juicing the fruits. We all pretty much follow the same thumb rule around the globe. But yet, few places….reserve some special effects to their preparations. There is a chain of specialty juice shops around the North Arcot belt. Where they serve this unique ‘whole grapes juice’. It is so special that many of us ask them to cater for birthday parties. Well, they don’t crush the grapes here…instead, retain it intact! Kind of gives a nice mouth-feel when you indulge in it.
Deep Purple grapes(seeded, small variety) 1/2 kilo
Grape syrup – concentrate 1 cup
Sugar Syrup 3/4 cup
Grape essence few drops
Wash and clean grapes thoroughly. Remove the stalks.
Now allow this to stand in warm water for about 5 minutes.
Slowly, peel the skin and de seed them carefully. Make sure that you are not crushed the pulp at the same time. If it doesn’t peel off easily, allow to stand in warm water for few more minutes. And do not cook the grapes!
Refrigerate this peeled grapes.
Prepare a strong sugar syrup and mix the grape juice concentrate to it and grape essence as well. Bring this to room temperature.
Further, voluminize this syrup with cold water and crushed ice. Add the peeled grapes to it and mix well.
Serve chilled in a short or tall glass.
